Dianne Dillingham
Owner & Director of Operations
Born in Texas, Dianne pursued a career in hospitality from an early age. She started her journey cooking for a small-town bed and breakfast and moved on to various restaurant jobs in Austin and New York. Eventually she established a career at Starwood Hotels in their luxury hospitality group. Her love of wine came from discovering eclectic winemakers in California and Europe through small neighborhood shops and bars. Dianne’s goal for Scout is to offer guests a welcoming space to connect with the community, enjoy a glass (or more!) with friends, and discover new varietals and emerging producers. You can find her most days answering the phone, helping customers and stocking shelves.
Dianne has a BA from New York University and an MFA from Claremont Graduate University. She has completed certification coursework with the Court of Master Sommeliers. Dianne lives in Hailey with husband Casey and their children Cecily and Hutch.
Amie Marvel
General Manager & Wine Director/Sommelier
Amie’s journey through the food and wine world has taken her across the globe in pursuit of the stories behind all the special places and people that make our tables bountiful. Originally from Northern California, Amie built her career at some of America’s best restaurants, from the Greenbriar Inn in Boulder, to Delfina and Bar Tartine in San Francisco, to the (multiple) James Beard Award-winning Link Restaurant Group in New Orleans. Having worked three seasons on organic farms, including a winery on Bainbridge Island and a creamery in Maine, she then spent time as a cheesemonger and cheese/wine educator at St. James Cheese Company and Faubourg Wines (NOLA). After a few more years as a buyer for a boutique wine shop in Ann Arbor, Amie finally came back to the Mountain West to make her home in Ketchum. During her time here she’s developed specialized wine programs for The Covey restaurant and Ketchum Kitchens. She’s looking forward to many more years of servicing this amazing community and finding delicious things for you to enjoy.
Amie studied Classics at Trinity College in Dublin, Ireland and holds a BA in Creative Writing from SFSU. She has over 20 years of experience in food, wine, and hospitality, and will earn her WSET III Sommelier Certificate in Spring 2022. She lives in Ketchum with her husband Matt, their daughter Sylvie, and two gourmand tuxedo cats.
